Zesty Lemon Chicken, Mango & Avocado Rice Salad

This bright, vibrant spring salad is packed with fresh flavours, high quality protein and ingredients that naturally contain amino acids. It’s perfect for supporting energy, recovery and gut health while following a gluten free diet.

Ingredients

For the salad

  • 2 chicken breasts

  • 150g jasmine rice

  • 1 ripe mango, diced

  • 1 avocado, diced

  • 1 red pepper, finely sliced

  • ½ cucumber, diced

  • 1 small handful fresh coriander

  • 1 small handful fresh mint

  • 1 tbsp toasted sesame seeds

  • 1 tbsp olive oil

  • Salt and pepper

For the zesty dressing

  • Juice of 1 lime

  • Juice of ½ lemon

  • 2 tbsp olive oil

  • 1 tsp honey

  • ½ tsp grated fresh ginger

  • Pinch of salt

Method

  1. Cook the rice
    Cook the jasmine rice according to packet instructions, then allow it to cool slightly.

  2. Cook the chicken
    Season the chicken breasts with salt and pepper. Heat olive oil in a pan and cook for 6–7 minutes on each side until golden and cooked through. Slice into thin strips.

  3. Prepare the salad
    In a large bowl combine the rice, mango, avocado, red pepper and cucumber.

  4. Make the dressing
    Whisk together lime juice, lemon juice, olive oil, honey, ginger and salt.

  5. Assemble
    Add the sliced chicken to the bowl, drizzle with the dressing and gently toss everything together.

  6. Finish
    Top with fresh coriander, mint and toasted sesame seeds.
