This is Dr Will's take on the classic Spanish dish Patatas Bravas. Using their Avocado Oil Mayonnaise to make a rather delicious aioli as featured in our July boxes!
A great snack or starter, perfect with a chilled GF beer!
Ingredients
For the potatoes:
- 500g potatoes, washed well
- 2 tbsp olive oil
- For the tomato sauce:
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 3 tbsp Dr Will’s Tomato Ketchup
- 1 can good quality chopped tomatoes
- 2 tsp chilli powder
- 2 tsp paprika
- Fresh parsley, chopped
For the garlic mayonnaise:
- 4 tbsp Dr Will’s Avocado Oil Mayonnaise
- 1 garlic clove, finely minced
- ½ teaspoon of sea salt
Method
- Preheat the oven to 200°c.
- Cut the potatoes into small cubes and spread in an even layer on a roasting tray. Drizzle the oil over the top and season well.
- Roast in the oven for 45-50 minutes until the potatoes are crispy and golden.
- Whilst the potatoes are cooking, start preparing the tomato sauce. Heat the olive oil in a pan, add the onion and fry for 5 minutes until soft.
- Add the garlic, chopped tomatoes, Dr Will’s Tomato Ketchup, chilli powder and paprika, and season well with salt and pepper. Simmer for around 10-15 minutes until the sauce is thick and pulpy.
- To make the mayonnaise, combine the Dr Will’s Mayonnaise of your choice, garlic and salt and stir well.
- To serve, start with the potatoes, cover with the tomato sauce and top with the ultra garlicky mayonnaise, finishing with a sprinkling of fresh parsley. Tuck in!
