Blueberry Granola Cups

Kasia's blueberry granola cups are an absolute sweet treat!

Makes: 2-3 cups

Equipment:

  • 2x loose bottom tart tins
  • 2x bowl
  • Spoon
  • Freezer
  • Cheese grater

Ingredients:

Granola cups

  • 100g oats70g honey
  • 1 tbsp melted coconut oil

For the filling:

  • 2 Tbsp coconut yoghurt
  • 3 Tbsp cream cheese
  • 1/2 Tsp blue spirulina (optional)

Topping:

  • blueberries and chocolate shavings

Other:

  • Oil/butter for greasing

Method:

  1. In a bowl, mix the honey, melted coconut oil and oats until combined
  2. Lightly grease the mini tart tins with oil or butter
  3. Spoon the mixture evenly into 2-3 mini tart tins (depending on size). Press this down lightly with the back of the spoon
  4. Pop in the freezer for 30 minutes to set slightly (this makes it easier for the granola base to keep shape)
  5. Whilst the granola sets, mix together the filling ingredients in a bowl
  6. Take the granola out of the tins and spoon even amounts of filling onto the top of the cups
  7. Decorate with blueberries and use a cheese grater to shave dark chocolate over the cups
